In gulf countries, bachelors prepare their own food with limited time. Hotel food is much more oily, undesirable for health that can increase blood cholesterol. The preparation given below use very little oil and found to be delicious.
Ingredients:
Chopped chicken, big onion, potato, ginger, garlic, pepper, red chilly powder, coriander powder, turmeric powder, salt, masala or grounded fennel seeds, green chilly, curry leaf, and oil.
Preparations:
- After cutting chicken into small pieces, wash it 3 times and put it in a cooking vessel with sufficient water. Add little pepper powder, ginger garlic paste, turmeric powder, salt, little chopped onion and allow it to boil until the chicken is well cooked forming a thick syrup of soup solution at the bottom. The taste of the chicken is from the soup solution formed. Switch off the flame.
- Take a pan, add little oil, put chopped onion, garlic, ginger all chopped nicely and in low flame sauté it till it become light brown. Now add green chilly, curry leaf and single potato cut into squares. After some time add 2-3 spoon of chilly power and coriander and mix it together.
- Add chicken soup solution that is left in the cooked chicken vessel and add sufficient water as per your choice and allow it to boil.
- Add the cooked chicken pieces into the vessel and mix it well with the curry solution. Allow them to cook for some time in low flame till the potato is half cooked.. If you like additional flavour add little chicken masala powder available in market or home made.
Tasty and healthy chicken curry is ready with less effort. Good for aged people, and those having high cholesterol.
